You probably know Sarah Woods, or at least her wonderful pastries and baked goods, from her offerings at Gathered Bakeshop & Market here in Astoria. Sarah uses locally sourced ingredients, honors a wide variety of diets, and executes her work with meticulous attention and care. Join her in this class as we dive into the world of pies.
Students will explore the fundamentals of pie making - mixing, rolling, and shaping dough; parbaking shells; the sometimes intimidating process of turning a fresh winter squash into luscious pie filling; the expansive world of winter squashes beyond pumpkin; and the ins and outs of custard fillings.
During this wonderful season of baking, this class will inform and energize you right into the holidays!
