BRISKET! As amazing as brisket can be, for some cooks, just the mention of cooking a brisket makes some nervous. We're hoping to get you comfortable and in fact excited to cook this sometimes difficult cut of beef. Sliced, chopped, burnt ends, ...we'll do it all!  And Pork Belly burnt ends too!  

 

We'll be cooking a variety of briskets, a variety of ways.  Low and slow on a pellet grill, hot and fast on an Outlaw Patio model.  Snake River Farms Wagyu Gold and run of the mill prime. We'll cover brisket selection, trimming, wrap (or no), time and temp, and most importantly, ...how to know when it's done!
