Description

Nose-to-tail, whole hog programs are becoming more and more common as a sustainable and affordable way for restaurants to work with local farms. This class focuses on ways that families and home cooks can support the same ethos and make the most of their food budget without becoming an expert in whole animal butchery. The secret is making the most of lesser-known cuts and thinking outside of the pork chop. 

In this workshop, Jonathan Pridgen, Cúrate Head of Charcuterie, will collaborate with farmer Marvin Ross of Peculiar Pig to demonstrate recipes and methods that extend the use of a single animal to make the most of our locally raised, ethical meats. Possible dishes include pastry dough from lard, stock from pork bones and cartilage, chicharrónes, sausage making, and/or a pork shank dish. A sampling of a few of these dishes, sips, mingling and Q&A available after the presentation.
