Description

Explore three different variations of what most of us know as a "tamale." From the US Southern Delta to Central America to the land of the Tsalaguwetiyi (Cherokee, East) people, you'll learn why and how each got its unique identity and tastes. 

Featuring three incredible chefs preparing a variation reflective of their cultural heritage:

  • Mixter Tyson Sampson preparing vegan Cherokee dumplings and bread also known as ᏎᎷᏗᏑᎦᏚ “seludisugadu,” which translates to corn-mixed-bread in English.
  • Luis Martinez preparing a masa tamale with nixtamalized corn
  • Terri Terrell preparing a Mississippi Delta-style Catfish Tamale with traditional masa harina 

This class will feature a live cooking demonstration from each chef as they share the history and meaning of the food. In addition, attendees will be sampling a dumpling or tamale for each of the distinctive recipes above and will gain a new appreciation for the ways in which our food sources have and continue to be transformed by people and culture over time.

Chow Chow Food + Culture Festival

Chow Chow's mission is to celebrate and enrich the unique foodways of the Southern Appalachian region. Chow Chow Food + Culture Festival is the organization's flagship annual event, held every year on the weekend after Labor Day. In 2023 we will gather September 7-10th to eat, drink, and be merry while we explore the themes of Cultivating, Preserving, Collborating, and Innovating with a robust line-up of presenters. 

As makers, chefs, artists, farmers and business owners, our vision is an equitable and thriving regional food system, where culinary and creative enterprise are central to community identity and resilience. We welcome the collective sum of differences, life experiences, knowledge, self-expression, and talent our makers and guests bring to Chow Chow, and we look forward to celebrating together.
