Join Eric Sauber, esteemed chef and instructor at the Culinary Institute of America, to learn the fundamentals of fermentation. Through this in-depth session you will be immersed into the ancient and transformative world of fermentation. 

This class is ideal for anyone new to fermentation or those looking to further expand on their curiosity about the biochemical magic behind fermented foods and beverages. For an even deeper, hands-on learning experience, Eric will be providing a sample from each of the different kinds of fermented goods including yogurt, kombucha, vinegar, bread and ship-koji cured beef. From the history to the microbial basics, Eric will guide you in a deep dive into the processes that have been pivotal in human history and cuisine.

At Twin Star Orchards, we use one simple ingredient to make our Brooklyn Cider House ciders – apples. So the structure, aromas, mouth feel, and any residual sugar are definitively tied to the quality of our apples. This is why our work begins on our farm. All of our ciders are made from freshly harvested apples, fermented in stainless steel tanks, and aged between two to eighteen months. We encourage wild yeast and microbes to leave their regional mark on all but one of our ciders, often with a boost from white wine yeast. We make our ciders with minimal intervention and strive for balance, depth of structure, and a lively acidity that begs to be paired with food.
