Emma has made it her mission to ensure that those with gluten-free diets and sensitive guts can have their cake and eat it.

In this class, Emma will share the tips and techniques behind successful gluten-free baking so you can say goodbye forever to dry, flat, crumbly messes. She’ll reveal the role of xanthan gum, explore different gluten-free flours (and teach you how to blend them) and explain why resting your cookie dough is so important. And her go-to rules for gluten-free will be complemented with tips for baking dairy-free as well.

By the end of the class you will takeaway:

  • fluffy sponge cupcakes with whipped cream and rhubarb & vanilla jam - showing how gluten free cake recipes can actually be quite forgiving
  • perfectly soft, crumbly scones - with tips for how to create layers as they puff up in the oven
  • classic chocolate chip cookies - learn how to ensure they are crisp on the outside and soft and chewy on the inside
