Passata Day at Brickendon Estate

Heirloom tomatoes are the stars of the Tasmanian summer! Join us for a hands-on day of preserving heirloom tomatoes, enjoying farmhouse food and learning practical kitchen skills at historic Brickendon Estate.

Whether you are new to preserving or keen to build confidence with your seasonal harvest, this workshop will guide you through the essentials of turning ripe heirloom tomatoes into delicious pantry staples. Discover the difference between passata and sugo, learn how to prepare whole peeled tomatoes, and explore methods for storing chopped and crushed tomatoes for future meals.

Throughout the day, you will learn about the science behind tomato preservation, preparation and safe storage. You will leave with useful techniques, plenty of inspiration for winter cooking and the confidence to create sauces and preserved tomatoes at home.

Your day includes

  • A full day of practical learning focused on passata, sugo, whole peeled tomatoes and chopped or crushed tomatoes

  • Guidance on preserving and storing tomatoes for pasta dishes, soups and comforting winter meals

  • A farmhouse brunch featuring freshly baked scones, house-made jam and Ashgrove whipped cream

  • A delicious lunch of Brickendon lamb pasta, housemade focaccia and seasonal Tasmanian sides

  • Six 500 ml jars of processed Seed and Stem heirloom tomatoes to take home

  • A workshop booklet to help you revisit the techniques and recipes after the day

  • The beautiful setting of Brickendon Estate, a World Heritage location

Our Seasonal Cooking Experiences are focused on creating connection through a shared food experience that provides both lasting memories and relevant skills.

Classes require a minimum of 8 guests and a maximum of 12 guests to ensure the best possible experience. They can be held in our commercial kitchen at Brickendon Estate in Longford or in your own home kitchen.
