For their next holler tasting menu Chefs Kale Carmon and Sara Shivani are putting together a menu that celebrates both of their cultural and culinary backgrounds utilizing fresh locally grown in-season produce, locally raised livestock, along with their house made koji cultured butters/ghees and buttermilks.
The dishes will be a synthesis of influences from the Southern United States and Memphis/Midsouth cuisine, as well as Northwestern India and Gujarati cuisine, and dishes that are personally relevant to Kale and Sara's journey as chefs and partners. The menu will be five courses that showcase common themes and ingredients that exist across both culinary traditions. Throughout this meal we will be heavily celebrating homemade breads using freshly milled landrace grains, as well as greens common across both cuisines, and their mutual love of okra, tomatoes, peppers, legumes, peanuts, all things saucy, and all things fried. Our entree course will be a thali, which is a traditional Indian method of dining that includes 6 individual components that represent the Shadrasa, which are the 6 types of flavors observed in many Indian culinary traditions: sweet, salty, sour, pungent, bitter, & astringent.
Tickets will be 100 dollars, including gratuity. We'll have two ticket options available for different dietary restrictions, one for omnivores, and one for vegetarians. If you are strictly plant based or have anybother dietary restrictions and would like to come, please reach out before purchasing your ticket and we'll see if we can work out an option for you. Cocktail and wine pairings will be available both as a package and a la carte at the time of the dinner.
