Back by popular demand, we’re offering another opportunity to learn to make kimchi with Kim Jiyeon, founder of Kim’s Kitchen and a third-generation kimchi maker. Born and raised in Korea, Jiyeon learned to make kimchi from her grandmother, who sold her homemade ferments in the local market. Jiyeon's mother later grew the family business into a popular fermented-food manufacturer that distributes all throughout South Korea, and now Jiyeon is bringing that same tradition to the US, at her shop, Kim's Kitchen, in New Jersey. 

Don't miss this opportunity to participate in this kimjang, the tradition of gathering with friends and family to make large quantities of kimchi, where you will learn a few family secrets to make perfectly seasoned kimchi with incredible depth of flavor. And please don't be scared if a Korean mom hand feeds you some kimchi. Kimjang is a family affair!

At Twin Star Orchards, we use one simple ingredient to make our Brooklyn Cider House ciders – apples. So the structure, aromas, mouth feel, and any residual sugar are definitively tied to the quality of our apples. This is why our work begins on our farm. All of our ciders are made from freshly harvested apples, fermented in stainless steel tanks, and aged between two to eighteen months. We encourage wild yeast and microbes to leave their regional mark on all but one of our ciders, often with a boost from white wine yeast. We make our ciders with minimal intervention and strive for balance, depth of structure, and a lively acidity that begs to be paired with food.
