In this special class, Chef Diego Ricaurte is your guide. Using quality seasonal ingredients, he will showcase the mix of indigenous and Spanish flavours that influence Latin American cuisine.

You are in excellent hands with Diego, who is head chef of local award winning Michelin Guide restaurant Palmito. A UK top 100 local restaurant, Palmito were also recognised for their good value & quality cooking with a Bib Gourmand from the Michelin Guide. 

During the class you will work in pairs to create a delicious seasonal menu, designed based on local availability on the day. We will be utilising delicious local produce including:

  • Lamb from Sussex Grazed- A meat box scheme promoting conservation grazing; sourcing high quality, grass-fed animals from the Sussex Downs.
  • Seasonal vegetables from Barcombe nurseries-  Organic veg box suppliers & growers nestled in the beautiful Sussex countryside, close to Lewes and Brighton.

Previous menus have included:

  • Handmade arepas (corn patties) or tortillas for tacos
  • Fillings such as chicharron (crispy pork), cochinita (slow-roasted pork), fried prawn or lamb (depending on season/ availability)
  • With sides such as refried black beans and a range of flavourful salsas
