Uncle Paul’s Red Beans and Rice – a recipe given to me by one of the greatest cooks I’ve ever met, who just happened to be my Uncle…featuring red beans simmered with onions, bell peppers, celery, and PITR Tasso Ham. There’s some other good stuff in there, but I can’t tell you that.
Szymon's Boudin (Pork) – seasoned pork, rice, onions, and spices, all stuffed into a sausage casing. Bursting with bold flavors, this classic snack is perfect on its own or paired with mustard and crackers. Hot Sauce wouldn't hurt either.
