Description

 PÀO PÀO is a one-hour lacto-fermentation pickling workshop covering one of the oldest pickling cultures in the world. During this workshop, Jess Eng and Mei Liao will cover one of the oldest pickling cultures in the world, diving into the history of Sichuan and Taiwan ferments, along with more contemporary fermentation techniques. The group will briefly sample a collection of lacto-fermented pickles & learn how to integrate these savory creations into food and beverage. Each attendee will also leave with a take-home mason jar of pickle completed during the session and knowledge on how to craft their own jar of pickles at home.

Jess Eng is a Brooklyn-based food writer and the founder of Ferments Live, a fermentation storytelling studio. Her writing has appeared in The Washington Post, The New York Times, TASTE, NPR, and more, where she writes primarily about Chinese diasporic food and recipes.

Meijie (Mei) Liao is a Brooklyn-based recipe developer and writer behind Day With Mei. Her social media videos combine science and oral storytelling to demystify Sichuanese ferments, taking viewers into doubanjiang factories or inside her 120-year-old paocai jar.

At Twin Star Orchards, we use one simple ingredient to make our Brooklyn Cider House ciders – apples. So the structure, aromas, mouth feel, and any residual sugar are definitively tied to the quality of our apples. This is why our work begins on our farm. All of our ciders are made from freshly harvested apples, fermented in stainless steel tanks, and aged between two to eighteen months. We encourage wild yeast and microbes to leave their regional mark on all but one of our ciders, often with a boost from white wine yeast. We make our ciders with minimal intervention and strive for balance, depth of structure, and a lively acidity that begs to be paired with food.
