Paul Kares presents Cook Like an Italian with Chef Frank

Ravioli and Stuffed Pasta. $85 pp

Pasta ripiena is the Italian term for "stuffed" or "filled" pasta, referring to delicate sheets of egg pasta dough sealed around savory fillings like meat, cheese, or vegetables. Common types include tortellini, ravioli, agnolotti, and tortelloni, often served with simple sauces, sage butter, or in broth. In this hands-on workshop, you’ll learn how to make ravioli like Nonna used to make – totally by hand!

The Workshop:

  • Chef Frank will demonstrate a classic egg pasta dough
  • Chef Frank will demonstrate how to sheet pasta, then demonstrate how to fill and seal your ravioli
  • Participants will sheet, fill, and seal their own ravioli using pre-made dough
  • Chef Frank will demonstrate other filled pasta shapes like tortellini and cappelletti.

What you will learn:

  • The proper ratios of egg and flour for a perfect pasta dough
  • Wrapping and resting your dough for ease of sheeting
  • How to sheet pasta using hand-operated sheeters
  • Proper piping techniques to properly fill your ravioli
  • Cooking and storage of your ravioli

How this works:

  • Participants will work in pairs to assist each other with pasta sheeting
  • Each participant will have their own pasta to sheet and a pre-filled pastry bag with ricotta cheese filling for their ravioli
  • Chef Frank will bring ALL the necessary equipment and food products for the hands-on workshop.
  • Participants will sheet their own dough, then fill seal their ravioli
  • Chef Frank will collect the ravioli and properly cook them
  • If time permits, participants are welcome to try other filled pasta shapes that Chef Frank will demonstrate
  • A pairing sauce will be provided to enjoy with your cooked ravioli.
  • If applicable, parents and grandparents should assist small children, which makes for a great interactive experience.  Chef Frank will assist where necessary.
  • We then enjoy our ravioli in a family style meal!  Paul Cullen wine is available for sale at the event.
  • Chef Frank will supply homemade focaccia and a surprise dessert for all to enjoy.

Paul Kares will weave together how these passions could be the foundation for life-long career for young people who are not necessarily college-bound and how they can hone their skills to be a personal chef, sommelier, performer, or all the above. Plus, Paul Kares will get them the tools like musical instruments, knives, etc for the students who can’t afford them and will donate to school systems that need equipment for their classrooms.
