How many times have you enjoyed a delicious meal at your favourite restaurant or at a dinner party with friends and realised the secret was in the sauce? Maybe it was a salad with a sensational dressing? A slow-braised dish with an incredible sauce? Or a perfect roast with a banger gravy? Whatever the dishg - the secret is always in the sauce!

In this cooking class we are going to explore the secrets behind that magical, hard-to-replicate element that makes every dish undeniably great!

We will begin with the 5 'mother sauces'

- béchamel

- velouté

- espagnole

- sauce tomate

- hollandaise

We will then explore variations of some of these sauces, the science behind a great sauce and the foundations of flavour used to create the perfect sauce. Our goal is not to teach you recipes, but teach you the principals of great sauce making so you can develop your own secret sauce! Your cooking will never be the same!

We will enjoy a delicious lunch sampling some of our creations, alongside some Brickendon Estate Lamb, seasonal sides and Bread & Butter sourdough. You will also get to take some some tastings of the sauces you have made.

Our Seasonal Cooking Experiences are focused on creating connection through a shared food experience that provides both lasting memories and relevant skills.

Classes require a minimum of 8 guests and a maximum of 12 guests to ensure the best possible experience. They can be held in our commercial kitchen at Brickendon Estate in Longford or in your own home kitchen.
