In this Talk + Taste Seminar, led by the creator of Darë Vegan Cheese, Gwendolyn Hageman, will delve into how traditional thinking, without limitation, has transformed one of the world’s most beloved foods, cheese. Starting with the tradition of cheesemaking, we'll explore how plant-based mediums differ from animal milk and how their interactions with microbes can recreate the texture, flavor, and application of dairy cheese.

 

Discover how to inoculate and properly age more advanced plant-based cheeses. Bring your woes and your wins to workshop best home practices. Don’t forget to save room for a snack! Sample various cheeses and appreciate the “how?!” behind our mind-blowing creations.

Chow Chow's mission is to celebrate and enrich the unique foodways of the Southern Appalachian region. Chow Chow Food + Culture Festival is the organization's flagship annual event, held every year on the weekend after Labor Day.
