The Bighorn is partnering with Chef Ian Volberding to offer our first multi-course wine dinner to our guests. It will be an exquisite seven-course wine dinner, where the art of fine dining and exceptional wine pairings intertwine. There are only 16 seats available. Your ticket includes all of your food and wine and auto-gratuity has already been added in.
Chef Ian is a Montana native and culinary expert who resides in Anaconda, Montana. Ian spent three transformative years at the renowned Apicius Culinary Institute in Florence, Italy where he discovered his profound love and appreciation for exceptional food and drink. Upon completing his culinary program, he honed his skills in the top kitchens of Paradise Valley, Gallatin Valley, and New York City.
Ian spent nearly a decade working on the line, before he felt the need for a change of pace. He left New York and returned to Montana where he received his Bachelor's degree from Montana State University, and eventually decided to get into real estate. Today he is a realtor for Anaconda Realty; but his deep-rooted passion for food has motivated him to collaborate with Vanessa at The Bighorn on creating elevated culinary experiences for their guests in Anaconda.
Together, Ian and Vanessa have hand selected the wines that will be paired with each of Ian's dishes. The featured wines all come from Indigenous Selections, a highly-specialized import company owned by Giorgio Rivetti of La Spinetta WInery. They represent a collection of carefully selected Italian wineries that showcase some of Italy's most captivating winemakers, specifically those who produce outstanding, terroir-driven wines from their respective regions.
David Dubou, Director of Sales and Education at Indigenous Selections, will also be with us for the evening and he will be introducing each of our featured wines to our guests as they are poured with each course. He will be sharing his vast knowledge on Italian wine and answering any and all questions about what makes the featured wines unique and exceptional.
Chef Ian and Vanessa's unique, world-class experiences in food and wine pair as perfectly as oysters and Chablis; and together they are thrilled to bring this caliber of experience to small town Montana. Seats are limited to 16 guests. This will be a world class dining experience.
