Chef Charlie Torgerson is a graduate of the Culinary Institute of America in New York. He started smoking back in 1989 and opened his first BBQ joint in Fairbanks Alaska in 1991. He spent over 19 years as an integral part of Famous Dave’s as their Executive Chef/Sr. Director of Culinary. Charlie now co-owns RC’s BBQ at the Minnesota State Fair, Charlie T’s Smokehouse BBQ Trailer and Charlie T’s Foods Consulting.

 

Whole Spare Ribs:

  1. Fabricate Whole Spare Ribs into St. Louis Style Ribs and Rib Tips

  3. Smoke in the same smoker with Oak or Pecan and Cherry
