Soup! It's a philosophy more than a product. A way of thinking and working with the ingredients you have on hand, being nimble in the kitchen, and ending up with a soul-nourishing bowl of seasonal goodness. Join local chef and soup enthusiast Nord as he walks and talks through all things soup!
Students will learn how to make both a broth-based soup and a cream-based soup, and will cover topics such as:
- making a roux, as well as other thickening agents
- mushroom prep and cookery
- different ways of cutting vegetables
- broth aromatics
- lentil cookery
- how to make a soup out of whatever you have in your kitchen
The workshop will be led by local cook Dustin Nord. Nord has been cooking professionally for over 20 years, from a farm-to-table chef at a winery in Minnesota to Executive Chef at Pelican Brewing in Cannon Beach. He has a wealth of knowledge, techniques, tips, and tricks that he is eager to share through Community Cooking Workshops here at North Coast Food Web.
