The Art of Pizza, Focaccia, and Calzone. 75.00pp

In this workshop, you’ll learn to make both a thin crust and deep-dish pizza crust, pizza sauce, and prepare toppings for pizza as well as its culinary cousin, calzone. We’ll also prepare a focaccia to bake at the end of the workshop.  We’ll use pizza screens, sheet trays, and even cast-iron skillets.  We’ll then spend the rest of the workshop making our own pizzas and calzones and eating them!

What you will learn:

  • How to make and shape Pizza dough and focaccia
  • Fermentation, proofing, and dough hydration
  • Make a quick pizza sauce

How this works:

  • Chef Frank will bring all the necessary equipment and food products, including mozzarella cheese, sauce, and several pizza toppings from which to choose
  • A dough and the sauce will be prepared on-site
  • Chef Frank will demonstrate how to knead and shape the dough
  • Each participant will then get a pre-made personal size dough ball to make and shape either a pizza or calzone to top or fill as they wish and then baked
  • If applicable, parents and grandparents should assist small children, which makes for a great interactive experience.  I will assist with baking each pizza or calzone.  
  • We then enjoy our pizzas!
  • Chef Frank will supply a surprise dessert.

  • No prior pizza making experience necessary.
  • This class is not gluten free.
  • This class will include a pizza dough making demonstration by the instructor.
  • With pre-prepared dough, you will learn how to stretch and shape individual dough by hand.

Paul Kares is a nonprofit organization whose mission is dedicated to educating aspiring chefs or musicians, focusing on kids and young adults who show interest and passion for culinary and musical arts. Paul Kares will weave together how these passions could be the foundation for life-long career for young people who are not necessarily college-bound and how they can hone their skills to be a personal chef, sommelier, performer, or all the above. Plus, Paul Kares will get them the tools like musical instruments, knives, etc for the students who can’t afford them and will donate to school systems that need equipment for their classrooms.
