What You Will Learn

In this class, Donald will be talking about dredging for oysters – under sail on a skipjack (the state boat!) and power dredging. Then Chef Gwyn will show you how to make three fantastic oyster dishes.


The Waterman & The Chef is an ongoing series that offers a unique look at a husband and wife duo who harvest and prepare the best the Chesapeake Bay region has to offer. Peppered with a bit of history and humor, the series is hosted by Donald Novak, a waterman of nearly 40 years, and his wife Chef Gwyn. Each episode follows the Novaks as Donald harvests a specific catch and Chef Gwyn creates a variety of amazing dishes using it as the centerpiece. The series also features guest appearances by colleagues in their respective industries, such as scallopers off Ocean City and Michelin-star chefs in their own kitchens. The Waterman & the Chef is a flavorful dive into Maryland history, cuisine, and culture like none other!

What To Expect

Great cooking is about more than just recipes—it's about celebrating culinary experiences with a foodie community. In this class, our professional chef instructor will show you how to create this fabulous menu, as well as offer you an exciting opportunity to assist in the kitchen. 

  • Instructors: Donald Novak and Chef Gwyn. Video of oysters being dredged on the water, as well as in-kitchen demonstration of cooking the spoils from the sea.
  • Length: Approximately 3 hours
  • Format: Demonstration Plus. Class will be taught by the instructors, with the opportunity for class members to be invited into the kitchen and assist with certain portions of the recipes. Everyone in the class will be able to enjoy the menu items made at the conclusion of the demonstration.
  • Restrictions: Ages 16 and older. Students under the age of 18 must be accompanied by a paying adult.


All students will receive a coupon good for $5 off any purchases made or class scheduled during the class
