World of Spice

This class is: in-person; hands-on.

Menu: Tarka Dal; Warm spiced carrot salad; and Chicken stew (inspired by the Ethiopian dish Doro Wat)

Join local legend Pat Milliman as she returns to the NCFW kitchen! Pat is reprising her role as food and spice educator extraordinaire, and this time she'll be partnering up with Pat's Pantry owner and avid cook, Savannah Thomas. Pat and Savannah will help students to orient to the wide world of spice through simple and delicious dishes, taking inspiration from around the world and featuring locally grown and raised ingredients.

This class will focus on the technique of blooming spices. This technique is used in cuisines around the world, and can add depth and interest to many dishes you already make at home!  

Students will learn:

  • how to use spices and herbs to add flavor to food
  • how to get the most flavor from spices and seeds by blending, toasting, or blooming
  • using fresh herbs vs dried
  • and so much more!

A bit about the instructors:

Pat loves food; whether cooking, eating, reading, taking classes, volunteering at the local farmer’s market, or traveling, it is always about the food! Her passion led her, along with her partner Tom, to open Pat’s Pantry, a spice and tea shop in Astoria, Oregon. Over the years Pat has volunteered at the Portland Farmer’s Market and River People Farmer’s Market in Astoria, Oregon, and served on the board of North Coast Food Web. Pat has a deep appreciation for locally grown and made foods. Her motto at the spice shop was “Eat locally, season globally”.

Savannah took over the reins of Pat's Pantry in 2021, and is excited to be teaming up with NCFW to help promote local foods. Savannah loves Astoria and loves where the food scene here is going. She is happiest when she is cooking for the people she loves.
